Peanut Butter Pie

CIMG0147Are you drooling yet?  My friend Amanda from Serenity Now shared her delicious cookie pie recipe and I am now forever grateful!CIMG0110 I switched up the recipe a bit and made it peanut butter for my dad for Father’s Day.  He is a huge PB fan! 

You will need:

  • Graham Cracker Crust
  • Peanut Butter
  • Cookies (PB)
  • Cool Whip (I use generic and lite…fat free not so much…but lite still tastes good with less calories)
  • Milk (I used soy but you don’t have to)
  • Chips (PB)
  • But pretty much you can use whatever you want…chocolate, fruit, the world is at your fingertips…just use the basic recipe as a building block

CIMG0111Now here is what you are not to do with the premade pie crust…try to take it out to put in a pretty pie dish.  Oh…it crumbles into a million pieces when you do that?  They should have a giant warning sign for that one… CIMG0113So I took the crumbled crust, put it in my pretty pie pan and let it bake to try to piece it back together…didn’t really work but I enjoyed some cookies and milk while I waited.   CIMG0114When you are done snacking, dip cookies into milk to soak and then layer on top of the crust.CIMG0118 You can crumble the cookies to fit in all the holes.  CIMG0119 Take the cool whip, snack, and then top the cookies with a layer of fluffy deliciousness. CIMG0120 Melt some peanut butter in the microwave. CIMG0121 Drizzle over cool whip and top with pb chips. CIMG0122 Repeat: cool whip, peanut butter, chips…CIMG0123 Crumble some cookies on top…CIMG0124 Add a dollop for presentation…we are all about making things pretty here…CIMG0130 FREEZE overnight…and try not to stick your finger in for one last lick. CIMG0132  Indulge.CIMG0155 Oh this is soooo good…and sooo easy….I love you Amanda…CIMG0157 Feel free to eat the leftovers the morning after…and you can try to be modest by eating it on a plate.  But let’s just be honest, it is a-okay to eat right out of the pie pan…one less dish to wash, right? I am really digging these quick, easy, and not from scratch desserts.  If only Sandra Lee hadn’t patented the whole semi-homemade thing, I would be all over it.  So go ahead and share yours…in the comments.  I will read, I will make, I will eat.
