Chicken Lasagna Roll Ups

We had some leftover lasagna noodles so I decided to come up with something a little different to use them up.  I mixed chicken with some of my favorite ingredients to make a delicious pasta stuffing.


Ingredients:

-Lasagna noodles

-Chicken

-Cream cheese

-Garlic

-Italian seasoning

-Parmesan cheese

-Spinach

-Salt and pepper


Cook noodles.


Cook chicken.  I like to use my George Foreman Grill.


Mix chicken with mixture ingredients.  The hot chicken helps melt the cream cheese and make it all creamy.  Last minute I decided to add spinach because I felt guilty there was no veggies.  Add ingredients to taste.  This mixture is amazing and easily could serve as a pasta sauce.


Put a little dollop on each lasagna noodle and roll up.



I topped it with some pasta sauce and mozarella cheese.  My husband LOVED it.  I was not a fan of the tomato sauce.  I felt like it lost the cream cheese mixture taste.  I think a garlic or alfredo type sauce might go better.  It was still delicious nonetheless. 


Bake in a 350 degree oven until cooked through and cheese is melted.  Yum!

  3. YUM! I am so trying this!
    I have left over lasagna noodles that aren't enough to make a lasagna but I feel bad throwing them away. Looks delish!
    I'm w/ you on the marinara I think I'd add a cream sauce.

    BTW I made sure I was logged in to MY google account ;)

  5. Mmmmm these look good! So I see you have veggie shreds. It works like cheese? My granddaughter has a milk allergy but she always wants to eat cheese. I thought maybe I'd try this. I didn't know it existed. :)
