Chicken Pesto Calzone


It is no secret I like chicken pesto anything...yet another variation of one of my favorite dinner combos.  That basil plant was the best $3 I spent all year...it just keeps on growing.

Ingredients:

-Pizza dough

-Chicken

-Pesto

-Spinach

-Parmesan Cheese

-Mozzarella cheese

-Salt and pepper


Mix all ingredients except pizza dough.  Roll out dough to form a long circle.  Scoop chicken pesto mixture onto half of the dough.


Fold over dough and pinch dough all the way around ends.  Use a knife to slit some air holes.


Brush dough with some olive oil.  Bake according to pizza dough directions.  I usually cook pizza at 425 degrees for 10-15 minutes.



I also make other pizza variations like chicken or turkey pepperoni with pasta sauce and mozarella.  I also make smaller calzones using the same technique making homemade "pizza pockets" that I cook and then put in the freezer to be reheated later.

  2. BTW_ I forgot to say thank you for the messages in regards marriage. I have been soul searching, asking people who have recently attended seminars, my Sis, etc. They all say the same thing: we must put our partners first (even before the kiddos which I don't do) I'm learning to serve him better.
    He was so shocked when I asked him today what HE wanted for dinner. He said it's being a while since I asked.
