Just over the last year I have become more of a coffee drinker. And when I say this I mean we actually have coffee in our house and an actual coffee maker. Baby steps people. But for me coffee is about sipping on a piping hot treat in the winter. I want it to be delicious but I also don't want to drink a ton of calories. It is a personal goal of mine to never rely on caffeine so I often make decaf unless I need the caffeine which is maybe once or twice every few weeks.
So after a few months of trying new coffee recipes and drinking coffee on a now somewhat regular basis, I feel like I have strong enough credentials to share some yummy holiday inspired recipes I have altered and came up with. Please take note that I like my coffee to be sweet and creamy so feel free to alter these to your personal coffee liking. Enjoy!
Skinny Pumpkin Spice Latte
1 cup coffee
2-1/2 cups Original Almond Breeze Almond Milk (40 calories a serving)
2 tablespoons vanilla
3 tablespoons Splenda
1/2 teaspoon pumpkin pie spice
2 heaping spoonfuls of pumpkin
Pour all ingredients into a pot and cook on the stove top. Mix ingredients with a whisk and cook until hot.
Egg Nog Latte
I just make this straight in my cup. Pour coffee into mug about 1/2-2/3 full and fill the rest with egg nog flavored soymilk. Warm up in the microwave if not hot enough.
Mint Chocolate Mocha
I also make this straight in my cup. Pour coffee into mug about 1/2-2/3 full and fill the rest with chocolate mint flavored soymilk. Warm up in the microwave if not hot enough.

I love coffee shop drinks and have recently started trying to make some at home! I'm thinking I'm going to have to pick up some almond milk and soy milk at the store :) Thanks for the ideas!
