Circus Animal Cookie Ice Cream Recipe


I am a sucker for a good childhood cookie favorite.  These circus animal cookies are quite possibly one of my favorites ever so making it into some sort of ice cream concoction seemed heavenly.  And it is.  I combined the cookies with one of my favorite vanilla ice cream recipes.  It has a really rich vanilla taste that pairs perfectly with these cookies.


To make this recipe you will want to break up the circus animal cookies into bite size pieces.  You can make them as big or small as you want.  The bigger the cookie, the more noticeable it will be when it is in ice cream form.


I also like to add some more sprinkles.  Can never have too many sprinkles, right?


Like any mix ins, you will make your ice cream in an ice cream maker and then mix in the cookies and sprinkles during the last five minutes.


Circus Animal Cookie Ice Cream

1 cup whole milk
3/4 cup granulated sugar
2 cups heavy cream
2 teaspoons vanilla extract
2 cups Circus Animal Cookies, broken into pieces
1/4 cup rainbow sprinkles

In a medium bowl, whisk milk and sugar until sugar is dissolved.  Stir in heavy cream and vanilla.  Cover and refrigerate for about an hour.

Pour mixture into ice cream maker and mix following manufacturer's instructions.  Add cookies and sprinkles during the last 5 minutes of mixing.  For real ice cream consistency, freeze for about 2 hours before serving.  But if you can't wait, it is more like frozen yogurt and is just as amazing in it's own way!

*I use Cuisinart's ICE-100 Compressor Ice Cream and Gelato Maker and LOVE it.  No freezing bowls required!

  3. Oh goodness, I want this in my life! Rite Aid sold a circus animal ice cream that we became obsessed with and now I have the recipe to make it myself... now if only I could afford the ice cream machine... haha
