I love egg nog. I even tried to make a homemade version once. But I rarely have it during the holidays as I am somewhat lactose intolerant plus the heavy calorie count made me running as I would rather nibble on a sugar cookie instead. But a few years ago, Silk came out with a lighter soy version of egg nog and it is amazing. At only 90 calories a serving (which is even lighter than light or low fat egg nog), this under 100 calorie latte will bring much joy to your holiday season and not your thighs!
And even though Christmas is not quite around the corner yet, since October 29th, I found egg nog filling the refrigerator section of my local grocery store. When I spied Silk's coveted soy egg nog (come weeks before Christmas, they will be completely sold out), I grabbed one up with pure excitement. I thought about stocking up for the holiday season but remembered soy milk did not freeze well. It was to my delight when I got home and saw that the expiration date was through a few weeks into December. You know I will be grabbing a few cartons next time I am at the grocery store. I will be that girl who has soy egg nog in her refrigerator every day from November 1st to 2014. Real life friends, go ahead and test me. Egg nog will be served.
So here's the recipe. I am starting to sound like a food blogger. So many words over egg nog...
Soy Egg Nog Latte
1/2 cup coffee
1/2 cup Silk Egg Nog Soy Milk
2 teaspoons sweetener (I use Splenda)
90 calories per serving (with Splenda)
Combine ingredients and warm over stove top or in your microwave. Too make up for all those calories you save, add a dollop of whipped cream if you would like!
