I have tried a couple strawberry ice cream recipes but none that really stuck. After a small amount of research I found that making strawberry ice cream with real strawberries brought upon challenges because of the water content. So I decided to give up after awhile until just recently.
After creating my homemade reduced fat vanilla ice cream, a genius thought came to mind...why not swap vanilla extract for strawberry extract? And that was how this strawberry flavored ice cream was born. It may not be real strawberries but I promise that it is real good.
I took my basic reduced fat ice cream recipe and made it strawberry flavored instead. How easy is that? It had me eying the different flavored extracts at the grocery store the other day. Root beer...hazelnut...mint...lemon. Oh the fun still yet to be had!
Reduced Fat Strawberry Ice Cream
1 cup reduced fat milk
1/4 cup Splenda
1/2 cup sugar
2 cups heavy cream
2 teaspoons strawberry extract
In a medium bowl, whisk to combine the milk, Splenda, and sugar until dissolved. Stir in heavy cream and strawberry extract to taste. Pour ice cream into ice cream maker and mix following manufacturer's instructions.
