Just Ingredients :: Chicken Pesto Pizza

I don't know about you but we are still getting basil out of the wa-zoo.  So that means there is a whole lot of pesto going on at our house.  One of my favorite easy meals is chicken pesto pizza.  It has emerged over the year as I have tried different variations in restaurants and have come to a perfect little mix. 


Homemade pizza dough, pesto {recipe from here}, and cheese.  I recently started putting the cheese on top of the sauce instead of on top of all the toppings.  It makes the dough perfectly sticky and cheesy.  So much better than cheese on top of everything {you can still sprinkle a little cheese on top at the end}. 


Top with chicken, tomatoes, and bell peppers {I usually use green for more color but only had red}.


Bake about 425 degrees for 10 minutes.  Enjoy!

    I have a yummy ricotta-pesto stuffed chicken recipe for the crock pot - I can't remember the portions but you can just wing like encourage us to do!

    Rinse chicken breasts. Combine Parmesan cheese, ricotta cheese, & pesto - spread mixture over chicken breasts. Roll chicken breasts & secure with tooth picks. Place chicken in crock pot, salt & pepper them. Combine milk & cream of mushroom soup, pour over chicken. Cook on low all day.
