Though we are avid protein shake breakfast drinkers, I like to have breakfast burritos on hand for when we are rushing out the door. I came up with an easy system to making a bunch of burritos ahead of time and freeze so that we always have them on hand when needed.
I most often use them when I get up with my husband in the morning as he gets ready for work. Since this is at the crazy hour of 5:00am (sometimes 4:51 for heavens sake) there are some mornings that I do not have the energy to make him a shake. Instead I pop one of these in the microwave straight out of the freezer and then tuck myself back in bed. Sure he can pour himself a bowl of cereal, but it is important to me to encourage him to start off his morning with a filling meal. Hence the make ahead freezer breakfast burritos.
I make the burritos assembly line style. I first cook the hash browns and put them on the tortillas. I then cook the eggs and top with cheese and meat. Sometimes this is leftover deli turkey or something like bacon bits. I usually just use whatever I have on hand at the moment.
Once the burritos are filled I wrap them in plastic wrap.
They then go into a large ziploc bag and into the freezer. Pretty simple. Takes maybe 20 minutes and I am set.
To eat, they go into the microwave, still wrapped in plastic wrap, for two minutes. As easy as that.
If you have a more adventurous palette, filling these with veggies and other seasonings would make for an even heartier or healthier option. Since these are mostly for my husband, I go with simple. I finally got him to drink shakes every morning so a tasty breakfast burrito on tired mornings are the least I could do!
