Last month we had dinner at BJ's and enjoyed one of their delicious brownie s'more pizookies. It was so yummy yet seemed so simple to make that I decided to try my own version at home. Let me just tell you that I was VERY pleased with the results. The BJ's version was just a little too chocolatey and rich for me so my take on it actually was more enjoyable to my palette.
And it is pretty much one of the easiest thing to make ever. All you need is a boxed brownie mix, peanut butter, and marshmallows. And of course ice cream if you want to make it a la mode (why wouldn't you?).
After the first time I made this I tried making it with a homemade brownie recipe and the consistency just wasn't the same. So you can try and get all fancy on this recipe. But why ruin something so easy and good? I personally am a box cake and box brownie kind of girl. Hate me. But I love it. Store bought cookies though? That is another story. Homemade cookie snob.
I made it in a circle pan so it could feel all pizookie-ish but really any pan will do. I have also made this a third time (in a month!?) and made them in small ramekins for individual servings. You just have to adjust the cooking time for different sizes. But besides that you really cannot go wrong.
Really this is just a brownie covered with marshmallows. But man, it is my new favorite. We are having it again on Christmas Eve. None of this pie business. I just want brownies and ice cream. Honestly it is so so so so so so so good.
Peanut Butter S'mores Brownie
1 box brownie mix + eggs, oil, water--whatever it calls for (I use Pillsburry)
1/2 cup peanut butter (melted)
marshmallows
vanilla ice cream (optional)
Mix brownies according to box. Stir in melted peanut butter. Bake brownies according to instructions. During the last 10 minutes of baking, take out brownie and cover with marshmallows. Return to oven and bake for remaining 10 minutes or until marshmallows start to brown.
Top with a big ol' scoop of vanilla ice cream!
