Two things. (1) I recently read an article about how because people watch so many cooking shows these days, we subconsciously think we need to eat restaurant style food every night. And (2) I started using a blank month calendar to meal plan. While it is nothing fancy, I am able to plan better seeing what I already made previous weeks as well as moving meals I never ended up making.
So the basis of this post is to share a week's menu plan. As well as remind myself and others that it is okay to make simple meals. Plus I want to get back on track a little bit with eating healthier at dinner time.
As a general rule, we eat mostly chicken. And we eat homemade pizza and tacos usually once a week. Both of these meals never get old for us and they are fairly easy to prepare.
MONDAY
Stuffed Baked Potatoes (using this recipe as a general guide)
- Bake Potatoes
- Mix potatoes with chicken, cheese, broccoli
- Stuff back into potatoes
Marinated Chicken
Chopped Cooked Vegetables
Cauliflower Mashed Potatoes
WEDNESDAY
Homemade Pizza
THURSDAY
Marinated Chicken
Rice or Quinoa
Grilled Zucchini and Carrots

Pancakes (Box mix for Brent Protein Pancakes for me)
