I am getting better at jotting down my weekly menus and have been expanding my normal dinner routine to create some yummy new recipes (to us)!
Here is our latest dinner menu plan.

Hillbilly Spaghetti Pie (with spaghetti squash instead of pasta, just omit the water from the recipe) - this is one of my favorite pasta dishes that I decided to try to lighten up with spaghetti squash. I was pleasantly surprised to find that it was AMAZING. Brent went back for thirds!
WEDNESDAY
Barbecued Chicken (marinated in barbecue sauce)
Steamed Broccoli
Potatoes with Olive Oil and Red Robin Seasoning on the barbecue (microwave cut potatoes for 5 minutes to speed up the cooking process and then put in foil with oil and seasoning to barbecue)
THURSDAY
Stuffed Tex-Mex Yellow Squash - I made stuffed squash for the first time. I absolutely loved the stuffing (that included the yellow squash) but the skin tasted really bitter to me. I think next time I will try just shredding the squash and making it into a casserole. But the basis of this dish is REALLY good and worth tweaking!

Tacos and Burritos - I make refried beans in the slow cooker (pinto beans, onion, garlic, and salt - puree once cooked) and then freeze batches. Then I use either chicken or ground turkey for the meat.
