Chia pudding is my new jam. On a whim I tried making it for the first time a few weeks ago and now I cannot stop. Since it is new to me I have only perfected my first recipe. But with all the possible flavor combinations, I am sure there will be many more beloved recipes in my future.
I originally found this basic recipe guide on Pinterest from Babble. It gives you the main recipe rundown and then suggestions for flavor combinations. From there I tweaked the recipe to my specific taste buds.
Chocolate Banana Almond Butter Chia Pudding Recipe
2 cups unsweetened original almond milk
1/2 teaspoon vanilla extract
3 tablespoons honey
1-2 tablespoons cocoa powder (depending on how strong you want it)
3 tablespoons almond butter (melted if too thick to whisk)
1 banana (sliced)
1/2 cup chia seeds
whipped cream or whipped topping (optional)
Whisk together almond milk, vanilla, and honey. Whisk in cocoa powder, almond butter, and sliced banana. Whisk in chia seeds. Lightly stir in whipped cream until combined. Refrigerate overnight. Divide into individual containers (I usually get about four).
// It is your choice but I personally liked the whipped cream combined instead of on top of the chia pudding. But depending on how decadent you want it, you can choose or omit.
// The first time I made this the chia seeds all sunk to the bottom so I had to stir it up again and leave it overnight an additional day. The second attempt came out perfect. Just an fyi in case you have any trouble.
