In this busy season of motherhood I found that I was craving delicious and comforting meals but did not have a lot of time or energy to cook. So I have come up with a few easy recipes that we love and that I make almost every week.
Meatball Soup
Bag of frozen meatballs
Can of garbanzo beans
1/2 can of diced tomatos
Frozen peppers and onions
4 cups of chicken stock (or equivalent chicken bullion)
1/2 packet taco seasoning
Frozen corn
Pour all into the slow cooker to cook. I like to serve it with cheese and either crescent rolls, crackers, or tortilla chips. My kids aren't big soup eaters so they usually will eat just the meatballs, rolls, and some cheese. :)
Grilled cheese is an easy kid's staple. But pair it with some creamy tomato soup and it's a simple and comforting meal for the adults too! With a baby in tow, I found it difficult to stand at the stove grilling up multiple grilled cheese sandwiches while holding my daughter. So I decided to try baking them in the oven and it has been a game changer!
Oven Baked Grilled Cheese
Sourdough bread slices
Butter
Cheese - I like to do one slice of American and top with a layer of shredded cheddar
Butter one side of the bread then top with cheese. Then butter second slice of bread and top the sandwich. Cook in a 375 degree oven for 8-10 minutes. Flip the sandwiches over and cook for another 8-10 minutes.
Serve with tomato bisque soup (I love the refrigerated Panera or Home Chef brand you can buy at the store).
